Is it possible to use a pre-existing XMPP/Jabber account of the form username@jabberservice.com with Kontalk clients?
If I register with my phone number instead, do I sign in on desktop clients with that same number?

no, you can use Kontalk only with a phone number.
And if you like to use the desktop client you have to Export your key from your phone:
And Import into your Desktopclient.
